Dudhi Halwa Lauki Halwa Bottle Gourd Halwa |
The best way to consume my portion of this wonderful vegetable called dudhi / lauki / bottle Gourd is by means of Dudhi Halwa.
Dudhi Halwa is easy to make and delicious too.The cooked vegetable is cooling, diuretic, sedative and anti bilious. Did you know that the dried and cored thick outer skin has traditionally been used to make musical instruments like the tanpura and veena .

Ingredients :
2 cups-Grated bottle Gourd
1/2 cup or to taste-Sugar
1/4 cup- Khoya
Ghee - 2 tsp
1 cup-milk
Dry fruits - As per choice
Pinch of cardamom powder
Directions :
| 1 | In a pan add ghee . Add grated dudhi and saute for 3-4 min. |
| 2 | Form a smooth paste of khoya and milk and add it to the pan.. |
| 3 | Keep stirring intermittently so that the halwa does not stick to the bottom of the pan.It takes about 10 to 12 min for the halwa to cook. |
| 4 | Add sugar , stir and let the misture dry out completely. |
| 5 | Put off the flame add cardamom powder , mix well. |
| 6 | Garnish with dry fruits. |
Note :
- Grated dudhi loses its colour if kept for a long time, use immediatly after grating.
