Moong Dal Halwa Recipe |
I love the slight nutty flavor of this halwa that comes from roasting the moong dal paste.
The feel of this halwa is heavy because of the ghee content yet it is easy to digest because of the moong dal.Moong dal also has high protein content.

Ingredients :
1 cup moong dal
1 cup ghee
2 cups milk
1 cup sugar
cardamom powder
few strands of saffron
Dry fruits for garnishing
Directions :
| 1 | Soak one cup of moong dal in water for 4 hrs. |
| 2 | Grind the soaked dal to a fine paste in a blender. |
| 3 | Heat a heavy bottom pan on medium heat, add ghee. |
| 4 | Once the ghee is hot add moong dal paste. |
| 5 | Keep stirring the paste on medium heat for about 25- 30 minutes. |
| 6 | The paste will start leaving ghee. |
| 7 | Add 2 cups of boiled milk to the roasted moong dal paste and stir it well.Set 2 tbsp of milk aside and add saffron strands to it. |
| 8 | Once the milk is absorbed ( about 3 – 4 minutes) add 1 cup sugar and mix well. |
| 9 | Cover once again and cook on medium flame for 5 minutes. Stir in between to avoid sticking of halwa to bottom of the pan. |
| 10 | Add cardamom powder and saffron milk to it. Stir well. |
| 11 | Garnish with dry fruits. |
